                        CAPRESE SALAD








                    INGREDIENT S
                    1 large tomato
                    1 ball of fresh mozzarella
                    A handful of basil leaves
                    1/4 cup of balsamic vinegar
                    3 tablespoons of extra virgin olive oil
                    Salt and pepper to taste







             Method to prepare the dressing:
              1.  On medium fl ame, use a saucepan to reduce the balsamic
                 vinegar. Volume should reduce to half and consistency
                 should be slightly thick.
              2.  Check by using a spoon, as it should coat the back of
                 the spoon.
              3.  Pour the balsamic reduction into a bowl.
              4.  Add freshly ground black pepper and a pinch of salt to taste.
              5.  Add extra virgin olive oil, and whisk well until the oil is
                 emulsifi ed with the vinegar.
             Method to prepare the salad:

              1.  Slice the tomato and cheese in rounds and plate them side by side.
              2.  Chiffonade fresh basil leaves (pile them up and thinly chop them).
              3.  Sprinkle the basil leaves and then drizzle the dressing on top of the
                 tomatoes and mozzarella cheese. Enjoy!
